Clam Chowder
  • Preparation: 15 min
  • Cooking: 35 min
  • Makes: 1 serving (418 g)
  • Difficulty: Medium
  • Diets: Non-Vegetarian
  • Contains: celery, dairy, gluten, pork, shellfish

Ingredients

  • 30 g Pork, cured, bacon, unprepared
  • 7 g Butter, without salt
  • 3 g Garlic, raw
  • 37.5 g Onions, raw
  • 0.5 g Spices, thyme, dried
  • 6 g Wheat flour, white, all-purpose, enriched, bleached
  • 60 g Milk, whole
  • 60 g Soup, vegetable broth, ready to serve
  • 46.3 g Clams, canned
  • 0.1 g Spices, bay leaf
  • 105 g Potatoes, flesh and skin, raw
  • 60 g Cream, fluid, half and half
  • 0.5 g Salt, table
  • 0.3 g Spices, pepper, black
  • 2 g Parsley, fresh

Method

  1. Heat a large pot over medium-high heat. Cook the bacon until it’s brown and crispy, about 6-8 minutes. Transfer the bacon to a plate lined with paper towels, leaving 1 tablespoon of bacon fat in the pot.
  2. Add the butter to the pot and let it melt. Add the garlic and onion, cooking and stirring often until the onions are translucent, about 2-3 minutes. Add the thyme and cook for another minute until it’s fragrant.
  3. Stir in the flour and cook for about 1 minute until it’s lightly browned. Gradually add the milk, vegetable stock, clam juice, and bay leaf, whisking constantly until the mixture thickens slightly, about 1-2 minutes. Add the potatoes.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 12-15 minutes.
  5. Stir in the half and half and the clams, cooking until heated through, about 1-2 minutes. Season with salt and pepper to taste. If the soup is too thick, add more half and half until it reaches the desired consistency.
  6. Serve immediately, garnished with the cooked bacon and parsley if desired.
