Beef stew
  • Preparation: 15 min
  • Cooking: 150 min
  • Makes: 1 serving (618 g)
  • Difficulty: Medium
  • Diets: Non-Vegetarian
  • Contains: alcohol, beef, celery, gluten, sulphite

Ingredients

  • 113 g Beef, stew meat
  • 210 g Beef, broth, bouillon, or consomme
  • 100 g Potatoes, raw, skin
  • 75 g Carrots, raw
  • 60 g Wine, table, red
  • 37.5 g Onions, raw
  • 6.3 g Vegetable oil, NFS
  • 7.5 g Vinegar, red wine
  • 7.5 g Wheat flour, white, all-purpose, enriched, unbleached
  • 1 g Salt, table
  • 0.3 g Spices, pepper, black
  • 0.3 g Spices, bay leaf

Method

  1. Mix the flour and pepper in a bowl. Add the beef and toss to coat well. Heat 25 grams of vegetable oil in a large pot. Add the beef in batches, avoiding overcrowding. Cook, turning the pieces until browned on all sides, about 5 minutes per batch, adding more oil if needed.
  2. Remove the beef from the pot. Add the red wine vinegar and red wine. Cook over medium-high heat, scraping the bottom of the pot to loosen any browned bits. Return the beef to the pot, add the beef broth and bay leaves. Bring to a boil, then reduce to a simmer.
  3. Cover and cook, occasionally skimming the broth, until the beef is tender, about 1.5 hours. Add the chopped onion and carrots, and simmer, covered, for 10 minutes. Add the potatoes and simmer until the vegetables are tender, about 30 minutes more. If the stew is too dry, add more beef broth or water. Season with salt and pepper to taste. Serve hot.
