  • Preparation: 20 min
  • Cooking: 40 min
  • Makes: 1 serving (375 g)
  • Difficulty: Medium
  • Diets: Non-Vegetarian
  • Contains: dairy, honey, poultry, sulphite

Ingredients

  • 225 g Chicken, broilers or fryers, wing, meat and skin, raw
  • 15 g Honey
  • 3.8 g Garlic, raw
  • 3.8 g Ginger root, raw
  • 15 g Syrups, maple
  • 15 g Vinegar, cider
  • 15 g Lemon juice from concentrate, bottled, REAL LEMON
  • 7.5 g Butter, without salt
  • 60 g Pineapple juice, 100%
  • 15 g Olive oil

Method

  1. Season the Chicken: In a bowl, mix 30 grams of honey, 7.5 grams of minced garlic, 7.5 grams of minced ginger, and 30 ml of maple syrup. Add the chicken wings to this mixture and coat them evenly. Pour 60 ml of apple wine and 30 ml of lemon juice over the chicken, ensuring it's well covered. Let the chicken marinate for at least 30 minutes, preferably overnight.
  2. Prepare the Glaze: In a saucepan, combine 240 ml of 100% pineapple juice, 60 ml of apple wine, 30 ml of lemon juice, 30 grams of butter, and 30 grams of honey. Add 7.5 grams of minced garlic and 7.5 grams of minced ginger to the mixture. Simmer on low heat until the glaze thickens slightly.
  3. Cook the Chicken: Preheat your oven to 200°C (400°F). Heat 60 ml of olive oil in a large ovenproof skillet over medium-high heat. Add the marinated chicken wings and sear them on all sides until golden brown, about 5-7 minutes.
  4. Bake: Once seared, brush the chicken wings with the prepared glaze and transfer the skillet to the oven. Bake for 30-35 minutes, basting the wings with more glaze halfway through.
  5. Serve: Once cooked, remove the wings from the oven and let them rest for a few minutes. Serve with a final drizzle of the remaining glaze
