One serving has 360 kcal and 15 g protein, and at least a fifth of a woman's daily need of copper (69%), manganese (47%), pyridoxine (45%), niacin (32%), vitamin C (31%) and iron (29%). Ready in 50 minutes.

- Preparation: 20 min
- Cooking: 30 min
- Makes: 1 serving (451 g)
- Difficulty: Medium
- Diets: High protein, Non-Vegetarian
- Contains: gluten, poultry, soy
Ingredients
- 125 g Chicken or turkey and potatoes with gravy
- 15 g Mushrooms, shiitake
- 100 g Potatoes, raw, skin
- 10 g Natto
- 37.5 g Onions, raw
- 2.3 g Garlic, raw
- 5 g Ginger root, raw
- 10 g Vegetable oil, NFS
- 6.3 g Soy sauce, reduced sodium
- 138 g Water, bottled, plain
- 0.3 g Salt, table
- 1.8 g Sugar, white, granulated or lump
Method
- Prepare Ingredients: Soak the dried mushrooms in hot water until they are soft, then slice them. Cut the meat into bite-sized pieces. Peel and cut potatoes into chunks.
- Heat Oil: In a wok or deep frying pan, heat the vegetable oil over medium heat.
- Fry Aromatics: Add the sliced onions, minced garlic, and sliced ginger. Fry until the onions are translucent and fragrant.
- Add Fermented Soybeans: Add the fermented soybeans (taucu) and fry for another 2-3 minutes, breaking them up to release flavors.
- Brown the Meat: Add the chicken. Stir-fry until they are no longer pink on the outside.
- Add Mushrooms and Potatoes: Add the sliced mushrooms and potato chunks. Stir to mix well with the aromatics and meat.
- Season and Simmer: Pour in the dark soy sauce, then add enough water to just cover the ingredients. Add salt to taste. If the dish is too salty from the soy sauce, balance it with a bit of sugar. Bring to a boil, then reduce heat to a simmer.
- Cook Until Tender: Let the dish simmer gently until the meat is cooked through and the potatoes are tender. This might take 20-30 minutes. If the liquid reduces too much, add more water.
- Adjust Flavor: Taste and adjust seasoning with more salt, soy sauce, or sugar if needed.
- Serve: Once everything is cooked and the sauce has thickened slightly, transfer to a serving dish. Garnish with fried shallots if desired.
