Soft Mandazi/Biegnets
  • Preparation: 15 min
  • Cooking: 60 min
  • Makes: 1 serving (101 g)
  • Difficulty: Easy
  • Diets: Non-Vegetarian, Halal, Kosher
  • Contains: dairy, egg, gluten

Ingredients

  • 45 g Wheat flour, white, all-purpose, enriched, bleached
  • 1.3 g Leavening agents, yeast, baker's, active dry
  • 9.4 g Sugar, white, granulated or lump
  • 0.6 g Leavening agents, baking powder, low-sodium
  • 0.3 g Spices, cardamom
  • 0.3 g Salt, table
  • 30 g Milk, whole
  • 7.5 g Butter, NFS
  • 6.3 g Egg, whole, raw

Method

  1. In a bowl, mix the all-purpose flour, instant yeast, sugar, baking powder, ground cardamom, and salt. Set aside.
  2. In a separate bowl, combine the lukewarm milk, melted butter/margarine, and the egg. Mix well.
  3. - Add the wet ingredients to the dry ingredients and knead into a dough. The dough should be smooth and elastic. - Cover the dough with a damp cloth and set it aside to rise for 1 hour or until it has doubled in size.
  4. - Roll out the dough on a lightly floured surface to a height of about 1cm. - Cut the dough into shapes of your choice, such as small squares, diamond shapes, or use a glass to cut out round shapes.
  5. - In a thick-bottomed pan, add enough oil to deep fry. Heat the oil over medium heat. The oil is ready when bubbles form around a wooden skewer inserted into the oil. - Carefully drop the cut dough shapes into the hot oil. Lower the heat to prevent the outside from burning while the inside remains uncooked. - Flip the mandazi over every 30 seconds and cook for about 2 minutes until golden brown.
  6. - Remove the mandazi from the oil and drain on paper towels. - Enjoy your soft and delicious mandazi warm!
