Keto Almond Flour Pancakes
  • Preparation: 10 min
  • Cooking: 15 min
  • Makes: 1 serving (161 g)
  • Difficulty: Easy
  • Diets: Ketogenic (Keto), Gluten-free, Low carb, Halal, Kosher
  • Contains: dairy, egg, nut

Ingredients

  • 100 g Egg, whole, raw
  • 50 g Nuts, almonds, blanched
  • 1 g Leavening agents, baking powder, double-acting, straight phosphate
  • 0.3 g Salt, table
  • 10 g Butter, NFS

Method

  1. In a mixing bowl, whisk the eggs until slightly frothy. Gradually add the almond flour, mixing well to avoid lumps. Stir in the baking powder and a pinch of salt. The batter should be thick but pourable. If it’s too thick, add a splash of almond milk or water to adjust the consistency.
  2. Heat a non-stick skillet or frying pan over medium heat. Add a small amount of butter or oil. Pour in about half the batter to form one pancake. Cook for 2-3 minutes on one side until bubbles form on the surface and the edges look set. Carefully flip and cook on the other side for 1-2 minutes until golden brown. Repeat with the remaining batter.
  3. Serve the pancakes warm. Add keto-friendly toppings such as fresh berries, sugar-free syrup, or whipped cream, if desired.
  4. Chef's Tips Consistency Check: Ensure the batter is thick but not overly stiff. Thin it with almond milk or water if needed. Flavor Variations: Add a splash of vanilla extract or a pinch of cinnamon to enhance the flavor. Perfect Flip: Wait for the edges to look set and bubbles to appear before flipping to achieve a golden-brown finish.
