- Cooking: 25 min
- Makes: 1 serving (303 g)
- Difficulty: Easy
- Diets: Gluten-free, High protein, Low carb, Nut-Free, Halal, Kosher
- Contains: dairy, egg, mustard, poultry
Ingredients
- 150 g Chicken, broiler, rotisserie, BBQ, thigh, meat only
- 100 g Broccoli, raw
- 25 g Mayonnaise, regular
- 15 g Cheese, Mozzarella, NFS
- 1 g Salt, table
- 2 g Spices, pepper, black
- 5 g Peppers, jalapeno, raw
- 5 g Olive oil
Method
- Heat 1 tsp of olive oil in a non-stick skillet over medium heat. While the skillet heats, pat the chicken thighs dry with a paper towel. Place the chicken thighs in the skillet and let them cook for about 5-7 minutes on each side, or until they are fully cooked (internal temperature should reach 75°C/165°F). Avoid moving the chicken too much so it develops a nice golden crust. Once cooked, transfer the chicken to a plate and let it cool slightly. Use two forks to shred the chicken into small pieces or dice it into cubes if you prefer a chunkier texture.
- Wash the broccoli thoroughly under running water. Use a knife to cut the broccoli into small florets, removing the tough stems. For a softer texture, you can steam the broccoli for 2-3 minutes before adding it to the casserole. This step is optional, but it ensures the broccoli is tender after baking.
- In a large mixing bowl, combine the shredded chicken, broccoli florets, mayonnaise, and half of the grated cheese. Season the mixture with salt and black pepper. If you like a little heat, add finely chopped jalapeño slices at this stage (or save them for the topping). Mix everything thoroughly using a spoon or spatula, making sure the mayonnaise coats all the ingredients evenly.
- Preheat your oven to 160°C (320°F). Lightly grease an oven-safe dish with olive oil or cooking spray to prevent sticking. Transfer the chicken and broccoli mixture into the dish, spreading it out evenly.
- Place the dish in the preheated oven and bake for 20 minutes. This allows the flavors to meld together, and the cheese inside the mixture will start to melt.
- After 20 minutes, carefully remove the casserole from the oven (use oven mitts!). Sprinkle the remaining grated cheese evenly over the top. Add a few jalapeño slices on top for decoration and a spicy kick. Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Once baked, let the casserole cool for 5 minutes to make it easier to serve. Use a large spoon to scoop portions onto plates. Pair it with a side salad or steamed rice for a complete meal. Enjoy your delicious, cheesy casserole!
- Chef's Tips Chicken Texture: Shredding the chicken helps it blend seamlessly with the other ingredients, but diced chicken works well for a chunkier bite. Cheese Selection: Mozzarella and cheddar are great melting cheeses, but you can try Parmesan for a nuttier flavor or gouda for a richer taste. Adjusting Spice: Jalapeños can be omitted or substituted with red pepper flakes for a milder spice level. Serving Suggestion: This casserole tastes great with a fresh side salad or crusty bread to soak up the cheesy goodness.
