Ingredients

  • 100 g Tomato products, canned, sauce
  • 250 g Soup, vegetable broth, ready to serve
  • 50 g Cream, heavy
  • 30 g Cheese, parmesan, hard
  • 2 g Olive oil
  • 30 g Cheese, feta
  • 5 g Basil, fresh

Method

  1. Gather all ingredients and tools before starting to make cooking stress-free. Use a medium saucepan, a mixing bowl, and a ladle.
  2. In a medium saucepan, pour the tomato sauce and water or vegetable broth. Stir the mixture well to combine. Place the saucepan over medium heat and bring the mixture to a gentle boil. Stir occasionally to prevent sticking.
  3. Reduce the heat to low and let the soup simmer for 10-15 minutes. This step helps blend the flavors and thins the tomato sauce to a smooth soup-like consistency. Stir every few minutes to ensure it doesn’t stick to the bottom
  4. For a richer soup, add 50g of cream or milk during the last 5 minutes of simmering. Stir well to incorporate. This will give the soup a silky texture and mild flavor.
  5. In a small bowl, mix 20g of powdered Parmesan cheese with 1-2 tsp of water or milk. Stir until it forms a thick, spreadable paste. Set aside for topping the soup later.
  6. Taste the soup and adjust seasoning if needed. You can add a pinch of salt, black pepper, or dried herbs like oregano for extra flavor. Turn off the heat and use a ladle to pour the hot soup into serving bowls.
  7. Drizzle a small amount of olive oil over each bowl for a hint of richness. Sprinkle crumbled feta cheese on top for a tangy contrast. Add a dollop of the prepared Parmesan paste to each bowl for a creamy finish.
  8. Top with fresh basil leaves for a pop of color and a burst of aroma. Serve immediately, paired with a slice of crusty bread or garlic toast if desired.
  9. Chef's Tips for Beginners Adjusting Thickness: If your soup is too thick, add small amounts of water or broth until you reach the desired consistency. Always add liquid gradually to avoid making it too thin. Blending Options: If you prefer a super-smooth soup, use an immersion blender to puree the mixture before adding the toppings. Cheese Variety: If feta isn’t available, you can use crumbled goat cheese or a sprinkle of mozzarella for a mild flavor. Serving Pairings: Garlic bread, a
