Sauteed Mushrooms and Asparagus with Bacon and Poached Egg
  • Preparation: 10 min
  • Cooking: 15 min
  • Makes: 1 serving (425 g)
  • Difficulty: Easy
  • Diets: Gluten-free, High protein, Ketogenic (Keto)
  • Contains: dairy, egg, pork

Ingredients

  • 5 g Ghee, clarified butter
  • 113 g Mushrooms, raw
  • 100 g Asparagus, raw
  • 50 g Pork, cured, bacon, unprepared
  • 50 g Tomatoes, raw
  • 1 g Salt, table
  • 1 g Spices, pepper, black
  • 100 g Egg, whole, raw
  • 5 g Vinegar

Method

  1. Heat oil or butter in a non-stick skillet over medium heat. Add the sliced mushrooms and trimmed asparagus (or green beans). Sauté for 4-6 minutes, stirring occasionally, until the mushrooms are golden brown and the asparagus is tender but still slightly crisp.
  2. In the same skillet, lay the bacon slices flat and fry over medium heat until crispy, about 4-5 minutes per side. If using ground meat, cook it in the skillet until browned and fully cooked, breaking it into small pieces with a spatula. Remove and set aside on a plate lined with paper towels to drain excess grease.
  3. Fill a medium saucepan with water and bring it to a gentle simmer (not boiling). Add the vinegar to the water. Crack each egg into a small bowl to ensure the yolk remains intact. Gently slide one egg at a time into the simmering water. Let the egg cook for 3-4 minutes for a runny yolk or longer if you prefer a firmer yolk. Remove the poached eggs with a slotted spoon and place them on a paper towel to drain.
  4. On a serving plate, arrange the sautéed mushrooms and asparagus as a base. Add fresh tomato slices to the plate, slightly overlapping for a colorful presentation. Season with salt and black pepper to taste.
  5. Lay the crispy bacon slices or cooked ground meat on top of the vegetable mixture. Gently place the poached egg on top of the bacon.
  6. If desired, serve with a slice of crusty bread or toast on the side to soak up the egg yolk and juices. Serve the dish immediately while warm.
  7. Chef's Tips for Beginners Perfect Poached Eggs: Keep the water at a gentle simmer (not boiling) to prevent the egg whites from breaking apart. Adding vinegar helps the egg whites stay together. Mushroom Sauté: Avoid overcrowding the skillet to ensure the mushrooms brown evenly. If needed, cook them in batches. Crispy Bacon: Start with a cold skillet for bacon to render the fat evenly, resulting in crispier slices. Serving Suggestion: If you’re not a fan of poached eggs, substitute with fried or soft-boiled eggs.
