Ingredients
- 40 g Flour, bread (strong)
- 24 g Water
- 8 g Olive oil
- 0.5 g Yeast, active dry
- 0.5 g Salt
- 50 g Onions, raw
- 20 g Mozzarella, low-moisture
- 0.3 g Oregano, dried
Method
- Mix the bread flour, yeast, salt and half the olive oil with the water into a soft dough; knead until smooth, then let rise, covered, until doubled, about 1.5 hours.
- Meanwhile, slice the onion thinly and cook it slowly in a little of the remaining oil over low heat for 20-25 minutes, stirring occasionally, until very soft and lightly golden.
- Press or stretch the risen dough into a well-oiled pan, dimpling it with your fingers.
- Scatter the mozzarella over the dough, then pile the caramelized onion on top.
- Drizzle with the remaining olive oil and sprinkle with the oregano.
- Bake at 220°C (425°F) for 20-25 minutes until the crust is golden and cooked through. Slice into wedges. Makes 1 slice; multiply the ingredients by 8 for a whole pizza.
