  • Preparation: 50 min
  • Cooking: 15 min
  • Makes: 1 serving (242 g)
  • Difficulty: Hard
  • Contains: dairy, egg, gluten, pork

Ingredients

  • 60 g Flour, all-purpose
  • 25 g Eggs, whole, raw
  • 30 g Ham, cooked
  • 35 g Mozzarella, low-moisture
  • 8 g Parmesan cheese
  • 0.2 g Nutmeg
  • 50 g Tomato sauce, canned
  • 25 g Cream, heavy
  • 8 g Butter, unsalted
  • 0.5 g Salt
  • 0.2 g Black pepper

Method

  1. Mix the flour and egg into a smooth dough, knead 8 minutes, then wrap and rest for 30 minutes.
  2. Meanwhile mix the ham, mozzarella, half the Parmesan, nutmeg, and a pinch of pepper into a firm filling.
  3. Roll the dough into two thin sheets; spoon small mounds of filling in rows on one sheet, cover with the second sheet, and press around each mound to seal, then cut into rounds with a glass or cutter.
  4. Bring a large pot of salted water to a boil and cook the sorrentinos for 4-5 minutes, until they float and the dough is tender; drain gently.
  5. While the pasta cooks, warm the tomato sauce with the cream and butter in a small pan over low heat until smooth, then season with the salt.
  6. Toss the drained sorrentinos in the pink sauce, plate, and finish with the remaining Parmesan.
