  • Difficulty: Easy

Ingredients

  • 200 g Herbal tea, brewed
  • 0.5 g Cinnamon
  • 0.3 g Cloves
  • 0.3 g Allspice
  • 2 g Lemon zest
  • 25 g Sugar, brown
  • 100 g Water

Method

  1. Mauby is traditionally brewed from mauby tree bark; here, simmer the brewed herbal tea with the cinnamon, cloves, allspice, and citrus zest (standing in for the bark's bittersweet flavor) for 10 minutes.
  2. Strain out the spices and zest, pressing to extract all the liquid.
  3. Stir in the brown sugar while the liquid is still warm, until fully dissolved.
  4. Stir in the water to dilute to taste, then chill well before serving over ice; mauby is meant to be sharply bittersweet, so adjust the sugar to taste.
