  • Preparation: 40 min
  • Cooking: 20 min
  • Makes: 1 serving (282 g)
  • Difficulty: Hard
  • Contains: celery, dairy, egg, gluten, poultry

Ingredients

  • 60 g Chicken breast, boneless, skinless, raw
  • 80 g Chicken broth
  • 50 g Flour, all-purpose
  • 5 g Butter, unsalted
  • 15 g Cream cheese
  • 10 g Onions, raw
  • 2 g Garlic, raw
  • 0.3 g Salt
  • 15 g Eggs, whole, raw
  • 20 g Breadcrumbs, dry
  • 25 g Vegetable oil

Method

  1. Makes 1 portion (2 pieces); multiply by 6 for a batch of 12. Poach the chicken breast in enough water to cover for 12-15 minutes until cooked through (internal temperature at least 74 °C/165 °F), then shred finely.
  2. Sauté the onion and garlic briefly, then mix with the shredded chicken, cream cheese, and salt to make a creamy filling.
  3. Bring the chicken broth and butter to a boil, then stir in the flour all at once and cook, stirring vigorously, until it forms a smooth, thick dough that pulls together; let cool slightly.
  4. Take a portion of dough, flatten it in your palm, place a spoonful of filling in the center, and shape it around the filling into a teardrop.
  5. Dip each croquette in the beaten egg, then roll in the breadcrumbs to coat.
  6. Deep-fry at 175 °C (350 °F) for 4-5 minutes until deep golden and heated through, then drain and serve hot.
