  • 10 g Vegetable oil
  • 30 g Onions, raw
  • 5 g Garlic, raw
  • 20 g Bell pepper, green, raw
  • 40 g Tomatoes, raw

Method

  1. Clean the liver and heart (a stand-in here for the pork heart traditionally used) well, trim any tough membrane, and cut into small pieces.

  3. Remove the offal, then in the same pot sauté the onion, garlic, bell pepper, and chili for 3-4 minutes, and add the tomato, bay leaf, and cumin, cooking 3 minutes more.
  4. Return the offal to the pot, add the vinegar and water, and simmer for 20-25 minutes until tender and the sauce has thickened.
  5. Season with the salt and serve hot.
