- Preparation: 15 min
- Cooking: 30 min
- Makes: 1 serving (509 g)
- Difficulty: Medium
- Diets: Pescatarian, Gluten-free, Dairy-free
- Contains: shellfish
Ingredients
- 60 g Cassava, raw
- 350 g Water
- 10 g Lime juice
- 3 g Garlic, raw
- 45 g Shrimp, raw
- 25 g Watercress, raw
- 15 g Tapioca pearls, dry
- 0.5 g Salt
Method
- Boil the cassava in the water for 20 minutes until tender; remove the cassava and reserve the broth as a stand-in for tucupi.
- Stir the lime juice, garlic, and salt into the broth to mimic tucupi's sour tang, and bring back to a simmer.
- Soak the tapioca pearls briefly in a little warm water until they soften slightly, then stir them into the simmering broth so it turns glossy and slightly thickened, standing in for the traditional tapioca goma.
- Add the shrimp (a stand-in for dried shrimp) and cook 3-4 minutes until opaque and cooked through.
- Stir in the watercress (standing in for jambu) just before serving, and ladle the hot broth into a bowl.
