One serving has 401 kcal and 5 g protein, and at least a fifth of a woman's daily need of vitamin C (183%), phosphorus (25%), thiamin (25%), copper (22%), selenium (21%) and folate (21%). Ready in 140 minutes.

- Preparation: 40 min
- Cooking: 100 min
- Makes: 1 serving (157 g)
- Difficulty: Hard
- Diets: Vegetarian
- Contains: alcohol, dairy, gluten
Ingredients
- 60 g Guava, raw
- 15 g Sugar
- 30 g Flour, all-purpose
- 1 g Baking powder
- 16 g Butter, unsalted
- 15 g Milk, whole
- 0.2 g Salt
- 15 g Sugar, brown
- 5 g Spirits
Method
- Makes 1 portion; multiply by 8 for a whole duff. For the full batch, mash the guava with two-thirds of the sugar into a chunky compote and simmer 5 minutes until slightly thickened; cool.
- Make a soft dough from the flour, baking powder, salt, half the butter, and the remaining sugar, loosened with the milk; roll it into a rectangle, spread the guava compote over it, and roll up into a log along the long edge.
- Wrap the log snugly in cheesecloth or foil, tying the ends, and lower it into a large pot of gently boiling water; boil about 1.5 hours, topping up water as needed, until the dough is cooked through.
- Unwrap and slice. For the sauce, melt the remaining butter with the brown sugar in a small pan until dissolved, then stir in the rum and simmer 1 minute.
- Spoon the warm rum-butter sauce over each slice and serve warm.
