  • Makes: 1 serving (373 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 100 g Coconut milk, canned
  • 80 g Water
  • 90 g Kidney beans, red, canned
  • 20 g Onions, raw
  • 4 g Garlic, raw
  • 0.3 g Thyme, dried
  • 3 g Chili peppers, red, raw
  • 1 g Salt
  • 75 g Rice, white, long-grain

Method

  1. Combine the coconut milk, water, drained kidney beans, onion, garlic, thyme, and whole chili in a pot and bring to a boil.
  2. Reduce the heat and simmer 8-10 minutes so the coconut milk takes on the beans' flavor and color.
  3. Stir in the rice and salt, cover, and cook on low heat for 18-20 minutes until the rice is tender and the liquid is absorbed.
  4. Remove the whole chili, fluff the rice and beans with a fork, and let stand 5 minutes before serving, traditionally alongside stewed chicken.
