Ingredients

  • 20 g Graham crackers
  • 8 g Butter, unsalted
  • 60 g Milk, whole
  • 20 g Sugar

  • 5 g Cornstarch
  • 0.3 g Vanilla extract
  • 20 g Egg whites, raw

  2. Whisk the milk, half the sugar, egg yolks, and cornstarch in a saucepan, then cook over medium heat, whisking constantly, for 6-8 minutes until thick and custard-like; stir in the vanilla.
  3. Pour the hot custard into the crust and smooth the top.
  4. Whisk the egg whites to soft peaks, then gradually whisk in the remaining sugar until glossy and stiff, and spread over the warm custard, sealing to the crust edge.
  5. Bake at 180 °C (350 °F) for 10-12 minutes until the meringue peaks are golden; cool completely, then chill before slicing.
