  • Preparation: 15 min
  • Cooking: 16 min
  • Makes: 1 serving (50.7 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free, Low carb
  • Contains: dairy, egg

Ingredients

  • 20 g Tapioca pearls, dry
  • 22 g Queso fresco
  • 3 g Butter, unsalted
  • 5.5 g Eggs, whole, raw
  • 0.2 g Salt

Method

  1. This is one roll; the amounts above are for one roll, so multiply everything by 10 for a full batch.
  2. The tapioca starch stands in for the cassava starch (almidón de yuca) that this bread is traditionally made from.
  3. In a food processor, pulse the tapioca starch to a fine powder, then add the queso fresco, softened butter, egg and salt.
  4. Process until the mixture just comes together into a soft, pliable dough; it will look a little grainy, that's normal.
  5. Shape into small rings or ovals, about 45 g each, and place on a lined tray.
  6. Bake at 200 °C (400 °F) for 15-18 minutes until the outside is set and lightly golden; the inside stays soft and chewy.
  7. Serve warm, ideally the same day.
