Ingredients

  • 60 g Rice, white, long-grain
  • 80 g Black beans, canned
  • 130 g Chicken breast, boneless, skinless, raw
  • 45 g Cabbage, green, raw
  • 25 g Tomatoes, raw
  • 60 g Plantains, ripe, raw
  • 30 g Tortillas, corn
  • 12 g Vegetable oil
  • 5 g Lime juice
  • 0.5 g Salt
  • 0.3 g Black pepper

Method

  1. Cook the rice in salted water, covered, for 18 minutes; warm the black beans separately in a small pot.
  2. Season the chicken breast with salt and pepper and grill or pan-fry it in a little oil for 5-6 minutes a side until cooked through and the juices run clear.
  3. Toss the shredded cabbage and tomato with the lime juice and a pinch of salt to make the simple slaw.
  4. Fry the ripe plantain slices in the remaining oil for 2 minutes a side until golden and caramelized at the edges.
  5. Warm the corn tortilla briefly in a dry pan.
  6. Plate the rice, beans, chicken, slaw, plantain and tortilla side by side on one plate, the way a casado is always served.
