  • Makes: 1 serving (318 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: beef, egg, gluten

Ingredients

  • 180 g Potatoes, russet, raw
  • 45 g Beef, ground, 80% lean, raw
  • 20 g Onions, raw
  • 8 g Tomato paste
  • 10 g Olives, green
  • 8 g Raisins
  • 4 g Garlic, raw
  • 0.5 g Cumin
  • 15 g Eggs, whole, raw
  • 12 g Breadcrumbs, dry
  • 15 g Vegetable oil
  • 0.5 g Salt

Method

  1. Boil the potato until very tender, about 20 minutes, then drain, mash smooth while hot, and season with a little of the salt; let it cool.
  2. Cook the onion and garlic in a splash of oil for 4 minutes, add the ground beef and cumin, and cook, breaking it up, until fully browned with no pink left, about 7 minutes.
  3. Stir in the tomato paste, chopped olives and raisins and cook for 2 more minutes; let this picadillo filling cool.
  4. Take a ball of mashed potato, flatten it in your palm, spoon a little filling into the center, and wrap the potato around it to seal into a smooth oval.
  5. Dip each ball in beaten egg, then roll in breadcrumbs.
  6. Fry in the oil at 175 °C (350 °F) for 4-5 minutes, turning occasionally, until deep golden all over, then drain on paper towel and serve hot.
