  • Makes: 1 serving (386 g)
  • Difficulty: Hard

  • Contains: poultry

Ingredients

  • 220 g Potatoes, raw
  • 110 g Chicken thighs, skin-on, raw
  • 3 g Chilies, dried red
  • 30 g Tomatoes, raw
  • 15 g Vegetable oil
  • 6 g Garlic, raw
  • 1 g Sazón seasoning
  • 0.5 g Cumin
  • 0.6 g Salt

Method

  1. Boil the potato until tender, about 20 minutes, then drain and mash smooth; this is the masa base for paches, used in place of corn masa.
  2. Soak the dried chili in hot water for 10 minutes, then blend with the tomato and garlic until smooth; simmer this sauce in the oil for 8 minutes.
  3. Stir the sauce, sazón and cumin into the mashed potato to make a smooth, orange-red dough.
  4. Season and brown the chicken pieces in a pan for 6-7 minutes.
  5. Spread a portion of the potato dough on a square of parchment or banana leaf, place a piece of chicken in the center, fold the dough over it, and wrap the parcel tightly.
  6. Steam the parcel for 45-50 minutes until firm and cooked through; check the chicken juices run clear.
  7. Unwrap and serve hot, straight from its parcel.
