  • Preparation: 1440 min
  • Cooking: 20 min
  • Makes: 1 serving (215 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, Low carb
  • Contains: pork, sulphite

Ingredients

  • 160 g Pork shoulder, raw
  • 25 g Vinegar, cider
  • 18 g Garlic, raw
  • 1 g Thyme, dried
  • 0.5 g Black pepper
  • 10 g Vegetable oil
  • 0.6 g Salt

Method

  1. Cut the pork shoulder into bite-sized chunks.
  2. Mash the garlic with the thyme, black pepper and salt, mix with the vinegar, and toss thoroughly with the pork.
  3. Cover and marinate in the refrigerator for at least 24 hours (traditionally up to a week), turning occasionally; the vinegar both flavors and helps preserve the meat.
  4. Lift the pork from the marinade and pat off the excess.
  5. Fry in the oil over medium heat for 15-18 minutes, turning often, until deeply golden and cooked through with no pink remaining.
  6. Serve hot, with some of the cooked-down garlic from the pan spooned over the top.
