Hard Dough Bread
One serving has 289 kcal and 9 g protein, and at least a fifth of a woman's daily need of thiamin (60%), selenium (45%), niacin (37%), folate (37%), riboflavin (36%) and manganese (27%). Ready in 160 minutes.

- Preparation: 120 min
- Cooking: 40 min
- Makes: 1 serving (107 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, gluten
Ingredients
- 60 g Flour, bread (strong)
- 5 g Sugar
- 5 g Butter, unsalted
- 20 g Milk, whole
- 1.5 g Yeast, active dry
- 0.8 g Salt
- 15 g Water
Method
- This is one thick slice; the dough below makes a small loaf that gives about 6 slices, so multiply by 6 for the whole loaf.
- Warm the milk and water slightly and dissolve the yeast and sugar in it; let stand for 10 minutes until foamy.
- Mix the flour and salt, then work in the butter and yeast mixture to a smooth, stiff dough; knead well for 10 minutes, this dough should be firmer than most bread doughs.
- Shape into a tight loaf in a small greased pan, cover and let rise for about 1.5-2 hours until it has grown but still feels dense.
- Bake at 190 °C (375 °F) for 35-40 minutes until deep golden and it sounds hollow when tapped.
- Cool completely before slicing; hard dough bread is dense and close-textured by design.
