Aguachile
One serving has 145 kcal and 27 g protein, and at least a fifth of a woman's daily need of copper (64%), phosphorus (44%), vitamin C (36%), vitamin K (27%), zinc (25%) and magnesium (20%). Ready in 20 minutes.

- Preparation: 20 min
- Makes: 1 serving (268 g)
- Difficulty: Medium
- Diets: Pescatarian, Gluten-free, Dairy-free, Low carb
- Contains: shellfish
Ingredients
- 130 g Shrimp, raw
- 60 g Lime juice
- 12 g Serrano peppers, raw
- 40 g Cucumber, raw
- 20 g Onions, red, raw
- 5 g Cilantro, fresh
- 0.6 g Salt
Method
- Use the freshest shrimp you can find; peel, devein and slice each one in half lengthwise.
- Blend two-thirds of the lime juice with the serrano chili and cilantro until smooth and bright green.
- Arrange the shrimp in a single layer on a plate or shallow dish and pour the green lime mixture over them, spreading to cover evenly.
- Let sit for 8-10 minutes; the lime juice will turn the shrimp opaque and firm, the way ceviche is cured.
- Scatter the thinly sliced cucumber and red onion over the top and drizzle with the remaining lime juice and the salt.
- Serve immediately, ice-cold.
