  • Preparation: 10 min
  • Cooking: 50 min
  • Makes: 1 serving (277 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: alcohol, dairy

Ingredients

  • 220 g Milk, whole
  • 55 g Sugar
  • 0.5 g Baking soda
  • 1 g Vanilla extract

Method

  1. Cajeta is traditionally made from goat's milk; whole cow's milk is used here as the closest catalog match and gives a very similar result.
  2. Combine the milk, sugar and baking soda in a wide, heavy pot (the baking soda helps it brown properly).
  3. Bring to a gentle simmer over medium-low heat, stirring occasionally.
  4. Keep simmering, stirring more frequently as it thickens, for 45-55 minutes until it turns a deep caramel color and coats the back of a spoon thickly.
  5. Stir in the vanilla in the last minute.
  6. Pour into a small jar and cool; it will thicken further as it cools. Makes about one small jar (roughly 3-4 servings as a topping).
