Ingredients

  • 38 g Flour, all-purpose
  • 9 g Vegetable shortening
  • 22 g Water
  • 0.5 g Baking powder
  • 0.5 g Salt

Method

  1. This makes one tortilla; multiply by 10 for a typical batch.
  2. Mix the flour, baking powder and salt, then rub in the shortening until it looks like coarse crumbs.
  3. Add the water and mix into a smooth, soft dough; knead for 2-3 minutes until elastic.
  4. Rest, covered, for 15-20 minutes, then roll into a very thin, even round.
  5. Cook on a dry, hot skillet for about 30-45 seconds a side, until it puffs in spots and picks up a few light golden spots, but stays soft and pliable.
  6. Keep warm, wrapped in a cloth, until serving.
