Ingredients

  • 60 g Pinto beans, dried
  • 10 g Lard
  • 20 g Onions, raw
  • 3 g Garlic, raw
  • 40 g Water
  • 0.7 g Salt

Method

  1. Soak the dried pinto beans in plenty of water for at least 4 hours or overnight, then drain and rinse.
  2. Put the beans in a pot with fresh water to cover generously, bring to a boil, then simmer for about 1.5 hours until completely soft, topping up water as needed; reserve some of the cooking liquid, then drain.
  3. Melt the lard in a skillet over medium heat and fry the onion and garlic for 3-4 minutes until softened.
  4. Add the cooked beans and a splash of the reserved cooking liquid, then mash roughly right in the pan with a fork or potato masher.
  5. Fry, stirring often, for 5-8 minutes until thick and creamy, adding a little more cooking liquid if they get too dry; season with the salt and serve warm.
