- Preparation: 10 min
- Cooking: 18 min
- Makes: 1 serving (361 g)
- Difficulty: Medium
- Diets: Pescatarian, Gluten-free, Dairy-free
- Contains: fish
Ingredients
- 150 g Croaker, raw
- 60 g Lime juice
- 40 g Onions, red, raw
- 5 g Chili peppers, red, raw
- 5 g Cilantro, fresh
- 60 g Sweet potato, raw
- 40 g Corn, sweet, raw
- 1 g Salt
Method
- Cut the very fresh fish fillet into 2 cm cubes; use only fresh, sushi-grade saltwater fish from a trusted source, since it will not be cooked with heat.
- Boil the sweet potato and corn separately in water until tender, about 15-18 minutes; drain and let cool.
- Place the fish in a bowl with the sliced red onion, chile and salt, then pour over the lime juice.
- Toss gently and let cure in the lime juice for 5-10 minutes, just until the fish turns opaque at the edges.
- Scatter with the cilantro and serve at once with the boiled sweet potato and corn alongside.
