  • Makes: 1 serving (856 g)
  • Difficulty: Hard
  • Diets: Gluten-free, Dairy-free, High protein
  • Contains: beef, celery

Ingredients

  • 150 g Beef tripe, raw
  • 60 g Beef chuck, raw
  • 80 g Cassava, raw
  • 60 g Plantains, green, raw
  • 50 g Corn, sweet, raw
  • 40 g Cabbage, green, raw
  • 40 g Tomatoes, raw
  • 20 g Onions, raw
  • 5 g Garlic, raw
  • 200 g Beef broth
  • 150 g Water
  • 1 g Salt

Method

  1. Rinse the tripe and cut it into bite-sized pieces; put it in a large pot with the beef chuck, broth and water. Tripe stands in here for the gelatinous richness of the traditional beef foot.
  2. Bring to a boil, skim off any foam, then cover and simmer for about 2 hours until the tripe is tender.
  3. Add the cassava and green plantain and simmer for 20 minutes, then add the corn and cabbage and cook for a final 15 minutes.
  4. Meanwhile, fry the tomato, onion and garlic together for 5 minutes and stir them into the soup; season with the salt.
  5. Ladle into deep bowls, making sure each gets some of the vegetables and meat.
