  • Preparation: 260 min
  • Cooking: 40 min
  • Makes: 1 serving (124 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 20 g Raisins
  • 15 g Prunes
  • 10 g Currants, dried
  • 8 g Spirits
  • 20 g Flour, all-purpose
  • 15 g Butter, unsalted
  • 15 g Sugar, brown
  • 20 g Eggs, whole, raw
  • 0.3 g Cinnamon
  • 0.2 g Nutmeg
  • 0.5 g Baking powder

Method

  1. Soak the raisins, prunes and currants in the spirits for at least 4 hours, or overnight for deeper flavor; the alcohol mostly cooks off in the oven since this is a baked, occasion cake.
  2. Blend the soaked fruit to a coarse paste.
  3. Cream the butter with the brown sugar until fluffy, then beat in the egg.
  4. Fold in the flour, baking powder, cinnamon and nutmeg, then stir in the fruit paste until evenly combined. This is 1 portion (one slice); multiply by 12 for a whole cake.
  5. Spoon into a small greased pan and bake at 160°C (320°F) for 35-40 minutes until a skewer comes out clean.
  6. Let cool completely in the pan before turning out and slicing.
