  • Makes: 1 serving (72.3 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Dairy-free
  • Contains: alcohol, egg, gluten

Ingredients

  • 35 g Egg whites, raw
  • 25 g Sugar
  • 10 g Flour, cake
  • 1 g Cream of tartar
  • 1 g Vanilla extract
  • 0.3 g Salt

Method

  1. Sift the cake flour with a third of the sugar and set aside.
  2. Whip the egg whites with the cream of tartar and salt to soft peaks, then gradually beat in the remaining sugar until stiff, glossy peaks form; beat in the vanilla.
  3. Sift the flour mixture over the meringue in three additions, folding gently each time so it stays airy.
  4. Pour the batter into an ungreased tube pan and smooth the top.
  5. Bake at 175°C (350°F) for 35-40 minutes until golden and the top springs back when touched.
  6. Invert the pan onto a bottle or its feet and cool completely upside down before running a knife around the edge and unmolding.
  7. Slice with a serrated knife. Makes 1 slice; multiply the ingredients by 12 for a whole cake.
