Ingredients

  • 20 g Flour, cake
  • 50 g Sugar
  • 10 g Butter, unsalted
  • 20 g Eggs, whole, raw
  • 1 g Baking powder
  • 1 g Vanilla extract
  • 90 g Ice cream, vanilla
  • 30 g Egg whites, raw

  1. Cream the butter with 20 g of the sugar, beat in the egg, then fold in the flour and baking powder.
  2. Spread the batter thinly in a small greased mold and bake at 190°C (375°F) for 10 minutes until set; cool completely.
  3. Press a scoop of ice cream firmly onto the cooled cake round and freeze until solid, at least 1 hour.
  4. Whisk the egg whites with the cream of tartar to soft peaks, then gradually beat in the remaining sugar until a stiff, glossy meringue forms.
  5. Take the cake and ice cream from the freezer and cover it completely and evenly with the meringue, right down to the base.
