  • Difficulty: Medium

  • Contains: alcohol, egg, gluten, pork

Ingredients

  • 15 g Flour, all-purpose
  • 10 g Sugar
  • 7 g Lard
  • 4 g Eggs, whole, raw
  • 0.3 g Baking powder
  • 0.3 g Anise seed
  • 0.5 g Cinnamon

Method

  1. Cream the lard with most of the sugar until light and fluffy, then beat in the egg, brandy and anise seed.
  2. Whisk the flour, baking powder and salt together and work it into the fat mixture to form a soft dough.
  3. Wrap and chill the dough for 20 minutes so it is easier to roll.
  4. Roll out to about 6 mm (¼ in) thick and cut into rounds or fleur-de-lis shapes.
  5. Mix the remaining sugar with the cinnamon and sprinkle over the tops.
  6. Bake at 190°C (375°F) for 10-12 minutes until just set but not browned, then cool on a rack. Makes 1 cookie; multiply the ingredients by 24 for a full batch.
