- Preparation: 15 min
- Cooking: 230 min
- Makes: 1 serving (198 g)
- Difficulty: Hard
- Diets: Dairy-free, High protein, Low carb
- Contains: beef, gluten
Ingredients
- 160 g Beef brisket, raw
- 30 g Barbecue sauce
- 5 g Sugar, brown
- 1 g Paprika
- 0.5 g Black pepper
- 0.5 g Salt
- 0.5 g Garlic powder
Method
- Trim the beef brisket point and pat it dry, then season all over with the salt, pepper, paprika and garlic powder.
- Smoke or slow-roast at 120°C (250°F) until deeply browned and fork-tender, with an internal temperature of about 95°C (203°F), 3-4 hours.
- Rest the brisket for 15 minutes, then cut it into 4 cm (1½ in) cubes.
- Toss the cubes with the barbecue sauce and brown sugar in a pan.
- Return to the smoker, or a hot oven at 200°C (400°F), for 15-20 minutes so the sauce caramelizes and clings to the meat.
- Rest briefly and serve hot, straight from the pan.
