  • Contains: alcohol, dairy, egg, gluten, sulphite

Ingredients

  • 30 g Pie crust, unbaked
  • 45 g Sugar
  • 18 g Butter, unsalted
  • 35 g Eggs, whole, raw
  • 10 g Buttermilk
  • 3 g Cornmeal, yellow
  • 2 g Vinegar, cider
  • 1 g Vanilla extract
  • 0.2 g Salt

Method

  1. Line a pie dish with the crust and crimp the edges decoratively.
  2. Whisk the sugar, cornmeal and salt together in a bowl.
  3. Whisk in the melted butter, then the eggs, buttermilk, vinegar and vanilla until smooth.
  4. Pour the filling into the crust.
  5. Bake at 190°C (375°F) for 35-40 minutes until the top is golden and the center is just set with a slight wobble.
  6. Cool completely, at least 2 hours, before slicing so the custard firms up. Makes 1 slice; multiply the ingredients by 8 for a whole pie.
