  • Makes: 1 serving (345 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: beef, dairy, egg, gluten

Ingredients

  • 160 g Beef top round, raw
  • 38 g Flour, all-purpose
  • 20 g Eggs, whole, raw
  • 110 g Milk, whole
  • 15 g Vegetable oil
  • 1 g Black pepper
  • 0.6 g Salt
  • 0.3 g Paprika

Method

  1. Pound the beef top round steak to about 6 mm (¼ in) thick with a meat mallet.
  2. Season 30 g of the flour with a little of the salt, pepper and paprika.
  3. Dip the steak in a little of the milk beaten with the egg, then dredge it in the seasoned flour, pressing to coat well.
  4. Pan-fry in the oil over medium-high heat for 3-4 minutes per side until golden and cooked through; drain on paper towels, keeping about a tablespoon of the drippings in the pan.
  5. Whisk the remaining flour into the drippings and cook for 1 minute, then gradually whisk in the remaining milk.
  6. Simmer, whisking, until thickened into a peppery gravy, 4-5 minutes, and season with the remaining salt and pepper.
  7. Spoon the gravy generously over the steak and serve hot.
