Ingredients

  • 20 g Flour, all-purpose
  • 33 g Sugar
  • 8 g Cocoa powder
  • 22 g Butter, unsalted
  • 15 g Eggs, whole, raw
  • 10 g Egg yolks, raw
  • 20 g Buttermilk
  • 0.5 g Baking soda
  • 0.3 g Salt
  • 0.5 g Vanilla extract

Method

  1. Whisk the flour, cocoa powder, baking soda and salt together.
  2. Cream half of the butter with the granulated sugar, beat in the whole egg and half of the vanilla, then mix in the dry ingredients alternately with the buttermilk.
  3. Pour into a greased round pan and bake at 175°C (350°F) for 25-28 minutes until a skewer comes out clean; cool completely.
  4. For the frosting, whisk the egg yolk, remaining sugar and evaporated milk in a saucepan and cook over medium heat, stirring, until thickened, 8-10 minutes.
  5. Off the heat, stir in the remaining butter and vanilla, then the shredded coconut and chopped pecans.
  6. Let the frosting cool until spreadable, then spread it over the top of the cooled cake. Makes 1 slice; multiply the ingredients by 12 for a whole cake.
