Key Lime Pie
One serving has 441 kcal and 8 g protein, and at least a fifth of a woman's daily need of riboflavin (36%), choline (36%), phosphorus (34%), selenium (31%), vitamin A (30%) and cobalamin (22%). Ready in 150 minutes.

- Preparation: 135 min
- Cooking: 15 min
- Makes: 1 serving (131 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten, honey
Ingredients
- 22 g Graham crackers
- 9 g Butter, unsalted
- 55 g Sweetened condensed milk
- 12 g Egg yolks, raw
- 15 g Lime juice
- 15 g Cream, heavy
- 3 g Sugar
Method
- Mix the crushed graham crackers with the melted butter and press firmly into a pie dish to form the crust.
- Whisk the sweetened condensed milk, egg yolks and lime juice together until smooth and slightly thickened.
- Pour the filling into the crust.
- Bake at 165°C (325°F) for 15 minutes until just set (baking cooks the egg yolks through, so the pie is safe to eat).
- Cool completely, at least 2 hours, and chill until firm.
- Whip the cream with the sugar to soft peaks and dollop over the pie before slicing. Makes 1 slice; multiply the ingredients by 8 for a whole pie.
