  • Makes: 1 serving (63 g)
  • Difficulty: Medium

  • Contains: dairy, egg, gluten

Ingredients

  • 33 g Flour, bread (strong)
  • 16 g Milk, whole
  • 7 g Butter, unsalted
  • 3 g Sugar
  • 3 g Eggs, whole, raw
  • 0.5 g Yeast, active dry
  • 0.5 g Salt

Method

  1. Warm the milk slightly and dissolve the yeast and sugar in it; let stand for 5-10 minutes until foamy.
  2. Mix in the flour, egg, half the melted butter and the salt to form a soft dough; knead until smooth and elastic, about 8 minutes.
  3. Let rise in a covered bowl until doubled, about 1 hour.
  4. Punch down, divide, and shape each piece into an oval, then fold it just off-center like a coin purse and place on a baking sheet.
  5. Let rise again for 30 minutes, then brush with the remaining melted butter.
  6. Bake at 190°C (375°F) for 15-18 minutes until golden brown. Makes 1 roll; multiply the ingredients by 15 for a whole batch.
