  • Cooking: 72 min
  • Makes: 1 serving (269 g)
  • Difficulty: Hard
  • Diets: Gluten-free, Dairy-free
  • Contains: beef, pork

Ingredients

  • 70 g Masa harina
  • 1.5 g Sazón seasoning
  • 50 g Water
  • 10 g Vegetable oil
  • 40 g Beef chuck, raw
  • 30 g Pork shoulder, raw
  • 20 g Onions, raw
  • 15 g Bell pepper, red, raw
  • 20 g Tomatoes, raw
  • 5 g Raisins
  • 5 g Olives, green
  • 2 g Capers
  • 0.7 g Salt

Method

  1. Fry the beef and pork with the onion, bell pepper and tomato for 10-12 minutes until browned and the vegetables soften, then stir in the raisins, olives and capers; season with the salt and let cool slightly.
  2. Mix the masa harina with the water, achiote seasoning and half the oil to a soft, colored dough.
  3. Spread the dough thinly on a large square of parchment paper or foil, standing in for the traditional plantain leaf.
  4. Spoon the meat filling into the center of the dough, then fold the parchment over to enclose everything into a neat rectangular parcel and tie securely. This is 1 portion (one hallaca); multiply to make more.
  5. Boil or steam the wrapped parcel for about 1 hour, until firm throughout.
  6. Let rest for 10 minutes before unwrapping and serving.
