  • Preparation: 5 min
  • Cooking: 15 min
  • Makes: 1 serving (526 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 500 g Milk, whole
  • 25 g Lemon juice
  • 1 g Salt

Method

  1. Heat the milk gently in a large pot to just below boiling, about 90°C (195°F), stirring occasionally so it doesn't scorch.
  2. Remove from the heat and stir in the lemon juice; let sit for 5 minutes until the milk curdles into soft curds and a thin, yellowish whey separates.
  3. Pour through a cloth-lined colander to drain, saving the curds and discarding the whey.
  4. While the curds are still warm, knead in the salt and press and stretch the cheese in your hands until it comes together into a smooth, springy ball.
  5. Shape into a round and let cool completely before slicing to serve.
