One serving has 460 kcal and 19 g protein, and at least a fifth of a woman's daily need of selenium (114%), choline (71%), riboflavin (60%), thiamin (45%), phosphorus (42%) and folate (41%). Ready in 20 minutes.

- Preparation: 5 min
- Cooking: 15 min
- Makes: 1 serving (266 g)
- Difficulty: Easy
- Diets: Vegetarian
- Contains: dairy, egg, gluten
Ingredients
- 50 g Pasta, dry
- 90 g Water
- 15 g Sugar
- 0.5 g Cardamom
- 0.05 g Saffron
- 10 g Butter, unsalted
- 100 g Eggs, whole, raw
- 0.5 g Salt
Method
- Boil the vermicelli (fine broken noodles) in the water for a few minutes until just tender, then drain, keeping a couple of tablespoons of the cooking water aside (it stands in for rose water here).
- Return the noodles to the pan with half the butter, the sugar, cardamom, saffron and reserved water; toss gently over low heat until glossy and fragrant.
- Beat the eggs with the salt and cook as a thin, plain omelet in a separate lightly buttered pan with the remaining butter, then slice into strips.
- Pile the sweet spiced noodles onto a plate and top with the omelet strips.
- Serve warm, traditionally for breakfast.
