  • Preparation: 75 min
  • Cooking: 25 min
  • Makes: 1 serving (127 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 55 g Flour, all-purpose
  • 30 g Butter, unsalted
  • 15 g Sugar
  • 15 g Milk, whole
  • 1 g Yeast, active dry
  • 10 g Eggs, whole, raw
  • 0.3 g Salt
  • 0.5 g Vanilla extract

Method

  1. Warm the milk slightly, stir in the yeast and a pinch of the sugar, and let stand for 10 minutes until foamy.
  2. Mix in most of the flour, a little of the softened butter, the salt and half the egg; knead into a soft, smooth dough, then cover and let rise for about 1 hour until doubled.
  3. Mash the remaining flour with the remaining butter, sugar and vanilla into a smooth paste (the khoriz filling).
  4. Roll the risen dough into a rectangle, spread the khoriz filling over it, then roll up tightly and coil into a spiral; flatten slightly and place in a small baking pan.
  5. Brush the top with the remaining beaten egg and prick a few times with a fork.
  6. Bake at 180°C (350°F) for 22-25 minutes until deep golden. Makes 1 slice; multiply the ingredients by 8 for a whole gata.
