Ingredients

  • 300 g Milk, whole
  • 15 g Yogurt, plain

Method

  1. Heat the milk in a saucepan to just below boiling, about 90°C (194°F), stirring occasionally so it doesn't catch.
  2. Let the milk cool to about 45°C (113°F), warm to the touch but not hot.
  3. Whisk in the plain yogurt, which carries the live cultures, until fully blended.
  4. Pour into a clean jar or bowl, cover, wrap in a towel, and leave somewhere warm for 6-8 hours, until set into a thick, tangy yogurt.
  5. Chill for at least 2 hours before serving cold, on its own or as a base for sauces and soups.
