Anari (Fresh Whey Cheese)
One serving has 250 kcal and 13 g protein, and at least a fifth of a woman's daily need of cobalamin (75%), riboflavin (62%), phosphorus (48%), calcium (45%), vitamin D (D2 + D3) (34%) and pantothenic acid (30%). Ready in 130 minutes.

- Preparation: 120 min
- Cooking: 10 min
- Makes: 1 serving (426 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free
- Contains: dairy
Ingredients
- 400 g Milk, whole
- 25 g Lemon juice
- 0.5 g Salt
Method
- Anari is traditionally made from the leftover whey when making halloumi; this simplified version curdles whole milk directly to give a similar soft, mild, ricotta-like cheese.
- Heat the milk in a pan to just below boiling, about 90°C (194°F), stirring so it doesn't catch.
- Stir in the lemon juice, then remove from the heat and let it stand undisturbed for 10 minutes as it separates into curds and clear whey.
- Line a sieve with muslin or a few layers of cheesecloth, set it over a bowl, and ladle in the curds.
- Let it drain for 1-2 hours at room temperature (or longer in the fridge for a firmer cheese), then sprinkle with the salt.
- Serve fresh, on its own, drizzled with honey, or crumbled over salads.
