  • Makes: 1 serving (149 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, sesame

Ingredients

  • 45 g Flour, all-purpose
  • 1 g Yeast, active dry
  • 15 g Milk, whole
  • 8 g Butter, unsalted
  • 15 g Eggs, whole, raw
  • 5 g Sugar
  • 40 g Queso blanco
  • 8 g Semolina
  • 8 g Raisins
  • 0.3 g Mint, dried
  • 3 g Sesame seeds
  • 0.3 g Salt

Method

  1. Mix the flour, yeast, sugar and salt, then work in the warm milk, butter and half the egg to form a soft dough; knead well, cover, and let rise for about 1 hour.
  2. Meanwhile, grate the cheese (the queso blanco stands in for the traditional Cypriot hard cheeses used) and mix it with the semolina, raisins, dried mint and the remaining egg to make a thick filling.
  3. Roll the risen dough into a round and spoon the filling into the center.
  4. Fold the edges of the dough up and over the filling, pleating them to partly enclose it and leave the cheese filling peeking through the top, in the traditional flaouna shape.
  5. Brush the top with any remaining egg and scatter with the sesame seeds.
  6. Bake at 180°C (350°F) for 25-28 minutes until golden brown, and serve warm or at room temperature.
