Soutzoukos (Walnut and Grape Must Candy)
One serving has 302 kcal and 5 g protein, and at least a fifth of a woman's daily need of copper (58%), manganese (48%), vitamin K (25%) and thiamin (23%). Ready in 375 minutes.

- Preparation: 360 min
- Cooking: 15 min
- Makes: 1 serving (188 g)
- Difficulty: Hard
- Diets: Vegan, Dairy-free
- Contains: gluten, nut
Ingredients
- 150 g Grapes, raw
- 20 g Walnuts
- 10 g Flour, all-purpose
- 8 g Sugar
Method
- Crush the grapes and press through a fine sieve or muslin to extract the juice (the grape must), discarding the skins and seeds.
- Whisk the flour into a splash of the cold must until smooth, then stir this into the rest of the must with the sugar in a pot.
- Bring to a gentle boil, stirring constantly, and cook for 10-15 minutes until it thickens into a glossy, pourable syrup.
- Thread the walnuts onto a length of kitchen string, then dip the string into the hot syrup so the nuts are fully coated, and hang it up to drip-dry.
- Repeat the dipping 4-5 times, letting each layer dry for a while before the next, until a firm coating has built up around the walnuts.
- Hang in a cool, dry place for at least a day (longer for a firmer candy) before slicing into pieces to serve.
