  • Preparation: 25 min
  • Cooking: 60 min
  • Makes: 1 serving (555 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: beef, celery, dairy, gluten, meat

Ingredients

  • 45 g Semolina
  • 15 g Flour, all-purpose
  • 45 g Water
  • 130 g Lamb shoulder, raw
  • 50 g Onions, raw
  • 6 g Garlic, raw
  • 90 g Tomatoes, canned, whole
  • 10 g Tomato paste
  • 10 g Ghee
  • 50 g Chickpeas, canned
  • 100 g Beef broth
  • 1 g Cumin
  • 1 g Paprika
  • 0.4 g Black pepper
  • 1.2 g Salt

Method

  1. Mix the semolina, flour and a pinch of the salt with the water into a soft dough; knead briefly and rest for 15 minutes.
  2. Roll the dough into a thin disc and cook it on a dry, hot skillet for about 1 minute per side, just until set, not browned; cool, then tear into small irregular pieces (this torn flatbread is the rougag).
  3. Melt the ghee in a pot and brown the lamb pieces on all sides with the chopped onion and garlic.
  4. Stir in the tomato paste, canned tomatoes, cumin, paprika and black pepper, then add the beef broth.
  5. Cover and simmer gently for 45 minutes, until the lamb is tender, then stir in the chickpeas and the remaining salt and simmer 5 minutes more.
  6. Put the torn rougag in a bowl, ladle most of the sauce over it and toss so the pieces soak it up, then top with the lamb, chickpeas and remaining sauce and serve hot.
