- Preparation: 35 min
- Cooking: 10 min
- Makes: 1 serving (175 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, Low carb
- Contains: meat
Ingredients
- 150 g Lamb, ground, raw
- 6 g Garlic, raw
- 8 g Sriracha
- 2 g Paprika
- 1.5 g Cumin
- 1 g Fennel seeds
- 0.5 g Cayenne pepper
- 5 g Olive oil
- 1 g Salt
Method
- Combine the ground lamb with the garlic, harissa (the sriracha stands in for the North African chili paste), paprika, cumin, fennel seeds, cayenne and salt in a bowl.
- Mix thoroughly with your hands until the spices are evenly worked through, then cover and chill for at least 30 minutes to let the flavors develop.
- Shape the mixture into two or three thin, finger-like sausage links (traditionally packed into narrow lamb casing, simplified here as formed links).
- Brush lightly with the olive oil and grill over medium-high heat, or in a hot pan, for 8-10 minutes, turning occasionally, until well charred outside and cooked through with no pink remaining (74°C/165°F).
- Serve hot, traditionally with bread and a squeeze of lemon.
